Cooking has always been a big part of my life. As a kid, I’d peek into pots and pans while my mom cooked, trying to figure out what made her dishes so good. When she was at work, my grandma—an amazing cook herself—would look after me, and her spaghetti Bolognese became my favorite dish. I spent years trying to figure out her secret recipe, and after five years of studying gastronomy and 30 years in the kitchen, I finally understood—it wasn’t just ingredients; it was the love and passion she put into every meal.
But my real love for cooking didn’t start in culinary school—it began when I started cooking for my own family. With a wife and three hungry boys, cooking wasn’t just a hobby—it became a daily mission to prepare delicious meals that brought everyone together.
That’s when I hit my biggest challenge. Cooking for five people meant big portions, and big portions often turned into big problems—especially when I tried to make stir-fry. I still remember the day I wanted to quickly sear thinly sliced beef to make the perfect stir-fry. Instead of getting a crispy, flavorful sear, the meat released its juices and started steaming instead of frying. What I hoped would be tender, smoky beef strips turned into chewy disappointment.
